Ingredients

  • 6 tuna steaks
  • 1 kilo onions
  • exrtra virgin olive oil
  • 1 cup of water
  • 4 tbsp of sugar
  • a pinch of salt
  • 250ml white wine vinegar
  • flour for dusting
  • chopped fresh mint

Method

Peel and finely slice a kilo of onions and gently fry in 4 tbsp of extra virgin olive oil for 5 minutes, stirring continually. Add a cup of water, turn up the heat a little and simmer till all the liquid has evaporated. Dissolve 4 tbsp of sugar and a pinch of salt in a bowl with 250ml white wine vinegar. Add to the onions, bring to the boil, and then take off the heat and season with salt only. Meanwhile, lightly flour 6 tuna steaks and pan-fry quickly so that they're still a little underdone in the middle. Place on serving plates and cover each steak with the hot sweet and sour onions.

To serve 

Let them cool before serving with chopped fresh mint.
