Ingredients

  • 1 large egg (divided yolk from whites)
  • 5 tbsp granulated sugar divided
  • 2 cup milk
  • 3 tbsp quick- cooking tapioca
  • 1/8 tsp salt
  • 1/2 tsp vanilla extract
  • 1 dash of cinnamon, on top each cup

Method

  • Beat with hand held electric mixer, egg whites until foamy,add 2 tablespoons sugar,beating until soft peak.
  • Mix yolk and 1 cup of milk in saucepan on medium heat, add tapioca,remaining sugar , salt and the rest of milk , cook until mixture comes to a full boil, stirring constantly, remove from heat , mix hot milk mixture , pour a little amount to egg whites , beat fast , quickly stir in rest of hot milk mixture to egg white, add vanilla stir ,
  • Cool stirring once after 15 minutes , then chill for a hour .makes 4 cups , serve enjoy top with a dash of cinnamon
