Ingredients
- 7 to 8 medium carrots
- 1 Tbsp. brown sugar
- 1 tsp. cornstarch
- 1/4 tsp. ground ginger
- 1/4 c. orange juice
- 1/4 tsp. salt
- 2 Tbsp. butter
Method
- Cut carrots in 1/2 inch slices (bias sliced).
- Boil 10 to 20 minutes.
- In small saucepan combine brown sugar, cornstarch, ground ginger and salt.
- Add orange juice.
- Cook, stirring constantly until thick and bubbly.
- Boil for 1 minute.
- Remove from heat, stir in butter.
- Pour sauce over drained carrots.
- Sprinkle with parsley.
