Ingredients

  • 1/2 c. light mayonnaise
  • 2 Tbsp. lemon or lime juice
  • 1 tsp. sugar
  • 1/2 tsp. ground ginger
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. curry powder (optional)
  • 2 c. cooked chicken
  • 4 peaches or nectarines, cubed
  • 1 c. chopped celery
  • 1/4 c. chopped green onions
  • 1/4 c. toasted almonds (optional)

Method

  • In large bowl, whisk together first 6 ingredients.
  • (For curried chicken salad, whisk in curry powder).
  • Stir in chicken, peaches, celery and green onions.
  • Cover and chill.
  • Before serving, stir in almonds, if desired.
