- 1/2 c. light mayonnaise
- 2 Tbsp. lemon or lime juice
- 1 tsp. sugar
- 1/2 tsp. ground ginger
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. curry powder (optional)
- 2 c. cooked chicken
- 4 peaches or nectarines, cubed
- 1 c. chopped celery
- 1/4 c. chopped green onions
- 1/4 c. toasted almonds (optional)
Method
- In large bowl, whisk together first 6 ingredients.
- (For curried chicken salad, whisk in curry powder).
- Stir in chicken, peaches, celery and green onions.
- Cover and chill.
- Before serving, stir in almonds, if desired.
- Makes 6 servings.
