- 3 tablespoons pesto
- 1/4 cup fat-free mayonnaise
- 2 teaspoons balsamic vinegar
- 1 teaspoon bottled minced garlic
- 1/4 teaspoon dry mustard
- 1 green onion, chopped
- 1/8 teaspoon freshly ground black pepper
- 8 (1-ounce) slices French bread, toasted
- 1 cup spinach leaves or gourmet salad greens
- 8 (1/4-inch-thick) slices tomato
Method
- Combine first 7 ingredients in a small bowl; stir with a whisk.
- Spread mayonnaise mixture evenly on 4 slices of bread (about 2 tablespoons per slice). Place 1/4 cup spinach leaves on each bread slice; top each with 2 slices tomato. Top with remaining bread slices.
