Ingredients

  • 3 tablespoons pesto
  • 1/4 cup fat-free mayonnaise
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon bottled minced garlic
  • 1/4 teaspoon dry mustard
  • 1 green onion, chopped
  • 1/8 teaspoon freshly ground black pepper
  • 8 (1-ounce) slices French bread, toasted
  • 1 cup spinach leaves or gourmet salad greens
  • 8 (1/4-inch-thick) slices tomato

Method

  • Combine first 7 ingredients in a small bowl; stir with a whisk.
  • Spread mayonnaise mixture evenly on 4 slices of bread (about 2 tablespoons per slice). Place 1/4 cup spinach leaves on each bread slice; top each with 2 slices tomato. Top with remaining bread slices.
