Ingredients
- 2 large zucchini or yellow squash, cubed
- 1/4 c. diced onion
- 1 c. shredded carrots
- 1 can cream of chicken soup
- 1 c. sour cream
- 1/2 c. butter
- 1 (8 oz.) Stove Top stuffing mix
Method
- Preheat oven to 350°.
- Cook zucchini, squash and onion in salted water for 5 minutes and drain.
- Combine soup and sour cream.
- Stir in carrots.
- Fold in zucchini and onion mixture. Combine stuffing mix according to package directions and spread 1/2 into baking dish.
- Spoon in vegetable mixture and spread remaining stuffing mixture over vegetables.
- Bake for 25 to 30 minutes uncovered.
