Ingredients

  • 2 large zucchini or yellow squash, cubed
  • 1/4 c. diced onion
  • 1 c. shredded carrots
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1/2 c. butter
  • 1 (8 oz.) Stove Top stuffing mix

Method

  • Preheat oven to 350°.
  • Cook zucchini, squash and onion in salted water for 5 minutes and drain.
  • Combine soup and sour cream.
  • Stir in carrots.
  • Fold in zucchini and onion mixture. Combine stuffing mix according to package directions and spread 1/2 into baking dish.
  • Spoon in vegetable mixture and spread remaining stuffing mixture over vegetables.
  • Bake for 25 to 30 minutes uncovered.
