Ingredients

  • 12 med Sized potatoes, peeled, cooked & warm
  • 1 pkt (8-ounce) cream cheese, room temp
  • 1/4 c. Butter
  • 1/2 c. Lowfat sour cream
  • 1 1/2 c. Lowfat milk
  • 2 x Large eggs, slightly beaten
  • 1/4 c. Onions, finely minced
  • 1 tsp Salt Pepper to taste

Method

  • Mash warm potatoes in large bowl with mixer.
  • Cut up cream cheese in small pcs and add in to bowl along with the butter.
  • Beat till cheese and butter are melted.
  • Fold in lowfat sour cream.
  • Add in Large eggs and onions to lowfat milk.
  • Add in this to the potatoes.
  • Add in salt and pepper; beat well till light and fluffy.
  • Place in greased casserole dish.
  • Score the top with a fork for appearance and bake in preheated oven at 350 degrees F for 45 min or possibly till lightly brown on top.
  • Let them cold for a few min before serving.
