Ingredients
- 1 cup pitted prunes, chopped
- 1 cup golden raisins
- 1/3 cup slivered almonds
- 2 tbsp cognac
- 1/4 cup superfine sugar
Method
- Place prunes, raisins, almonds and cognac in the food processor and pulse until the consistency of a paste.
- Wet hands and roll 1 heaping teaspoonful into a ball and then coat with the sugar.
- Best made 24 hours or so ahead. You can make the paste the night before and let the flavours soak, then roll the balls the next day if time is an issue.
