Ingredients
- 1 large zucchini
- 1 lb. ground beef, cooked and drained
- 1 egg
- 1/2 c. bread crumbs
- 8 oz. grated Mozzarella cheese
- 1 small can tomato sauce
- Parmesan cheese
Method
- Cut zucchini in half lengthwise.
- Hollow out, chop and fry with garlic and onion to taste.
- Drain.
- Add to cooked ground beef, egg, bread crumbs, cheese and salt and pepper to taste; mix well.
- Pack into zucchini shells.
- Spoon about 1/4 cup tomato sauce over each zucchini.
- Sprinkle with Parmesan cheese.
- Bake at 375° for 30 minutes (cover for last 10 minutes).
