Ingredients

  • 1 large zucchini
  • 1 lb. ground beef, cooked and drained
  • 1 egg
  • 1/2 c. bread crumbs
  • 8 oz. grated Mozzarella cheese
  • 1 small can tomato sauce
  • Parmesan cheese

Method

  • Cut zucchini in half lengthwise.
  • Hollow out, chop and fry with garlic and onion to taste.
  • Drain.
  • Add to cooked ground beef, egg, bread crumbs, cheese and salt and pepper to taste; mix well.
  • Pack into zucchini shells.
  • Spoon about 1/4 cup tomato sauce over each zucchini.
  • Sprinkle with Parmesan cheese.
  • Bake at 375° for 30 minutes (cover for last 10 minutes).
