Ingredients
- 4 boats (2 zucchini cut in half longways)
- 1/2 c. raw rice
- 1 c. water
- 1 tsp. salt
- 3/4 c. grated cheese
- 1 egg, beaten
- 1/2 tsp. oregano
- 1 tsp. onion flakes
- 1 tsp. parsley
Method
- Scoop out zucchini
- pulp; cook with raw rice, water and salt for 15
- minutes,
- covered.
- Take
- off
- heat.
- Add
- grated cheese, egg (beaten), oregano, onion flakes and parsley.
- Pile into shells.
- Bake
- at 350° for 25 minutes.
- Sprinkle top with a little grated cheese when taken out of oven.
