- 2 lb. zucchini
- 1/2 lb. ground beef
- 1/4 c. Hellmann's real mayonnaise
- 2 tsp. dehydrated onion flakes
- 2 tsp. dried parsley flakes
- 1 tsp. oregano leaves
- 1 tsp. salt
- 1 tsp. lemon juice
- 1/4 tsp. pepper
- 2/3 c. spaghetti sauce (divide calories by 4)
- 4 oz. cheese (optional; if you use it, be sure you count it!)
Method
- Halve zucchini.
- Scoop out centers, leaving 1/4-inch shell; place in shallow baking dish.
- Coarsely chop zucchini centers; mix with next 8 ingredients.
- Spoon into shells.
- Top with sauce and cheese (if desired).
- Bake in 350° oven for 30 minutes.
- Serves 4. Each serving = 3 protein (4 if you use cheese), 1 fat, free vegetables and optional calories for sauce.
