Ingredients

  • 1 (12 oz.) box jumbo shells
  • 1 egg
  • 1 (15 oz.) Ricotta cheese
  • 2 c. Mozzarella cheese
  • 1/2 to 3/4 c. Parmesan cheese
  • 1 Tbsp. parsley flakes
  • dash of salt and pepper

Method

  • Cook shells in boiling water until almost tender.
  • Set aside. Combine egg, Ricotta, Parmesan, parsley, salt, pepper and 1 1/2 cups Mozzarella together.
  • Spoon 1 to 2 tablespoons of cheese mixture into each shell.
  • Pour a thin layer of sauce in bottom of casserole dish.
  • Arrange shells on top of sauce.
  • Continue, layering shells and sauce.
  • Top with remaining Mozzarella cheese. Bake at 350° for 30 to 45 minutes or until it bubbles.
