Ingredients

  • 7 to 8 peppers
  • 1 lb. ground beef
  • 1/2 tsp. salt
  • dash of pepper
  • 1 egg
  • 1 small chopped onion
  • 1 can tomato soup
  • 1 c. cubed Velveeta cheese
  • 1 c. cooked rice
  • 4 Tbsp. water or little more

Method

  • Parboil peppers for 5 or so minutes.
  • Drain.
  • Brown beef with onion, salt and pepper; drain.
  • Remove from heat.
  • Add 1/2 can soup, egg, cheese and rice.
  • Stuff peppers with mixture, or layer with peppers in baking dish.
  • Mix remaining soup and water; pour over peppers.
  • Bake at 350° for 30 minutes.
