- 6 large green peppers
- 1 lb. ground beef
- 3 Tbsp. raw rice
- 2 Tbsp. cold water
- 1/2 tsp. black pepper
- 2 Tbsp. vegetable oil
- 1 c. chopped onions
- 1 (29 oz.) can tomatoes, drained
- 3 Tbsp. lemon juice
- 1/2 c. grated onion
- 1 egg, beaten
- 2 1/2 tsp. salt
- 3 Tbsp. sugar
Method
- Wash peppers.
- Cut 1-inch piece from tops and reserve.
- Scoop out seeds and fibers.
- Mix together meat, grated onion, rice, egg, water, 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
- Stuff mixture into peppers and replace tops.
- Heat oil in heavy saucepan.
- Saute chopped onions 10 minutes.
- Mix tomatoes, salt and pepper.
- Arrange peppers in upright position.
- On top, add lemon juice and sugar.
- Cover and cook 30 minutes or longer until tender.
- Baste frequently with sauce.
- Taste for seasoning.
- Gravy should be sweet and sour.
- Serves 6.
