Ingredients

  • 6 large green peppers
  • 1 lb. ground beef
  • 3 Tbsp. raw rice
  • 2 Tbsp. cold water
  • 1/2 tsp. black pepper
  • 2 Tbsp. vegetable oil
  • 1 c. chopped onions
  • 1 (29 oz.) can tomatoes, drained
  • 3 Tbsp. lemon juice
  • 1/2 c. grated onion
  • 1 egg, beaten
  • 2 1/2 tsp. salt
  • 3 Tbsp. sugar

Method

  • Wash peppers.
  • Cut 1-inch piece from tops and reserve.
  • Scoop out seeds and fibers.
  • Mix together meat, grated onion, rice, egg, water, 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
  • Stuff mixture into peppers and replace tops.
  • Heat oil in heavy saucepan.
  • Saute chopped onions 10 minutes.
  • Mix tomatoes, salt and pepper.
  • Arrange peppers in upright position.
  • On top, add lemon juice and sugar.
  • Cover and cook 30 minutes or longer until tender.
  • Baste frequently with sauce.
  • Taste for seasoning.
  • Gravy should be sweet and sour.
  • Serves 6.
