Ingredients
- 1 Goat cheese (soft)
- 1 Bell pepper
- 1 Salami (in cubes)
- 1 Tomato
Method
- Mix the goat cheese, salami and tomato (cubes, fresh, not canned) in a bowl, add salt/pepper to taste
- Chop the top off your bell pepper and remove core/seeds.
- Stuff the goat and salami mix into the pepper.
- Stick in the oven or microwave for a few minutes; the major advantage is that every ingredient is already totally OK to eat, so they're super quick!
- (At my first try I stuck them in for ten minutes at approx 300F...that's way too much)!
- Try adding fresh parsley, mint or basil to this recipe, or mix your stuffing up with some lime juice and top it off with fresh goat cheese just before serving.
