Ingredients

  • 1 Goat cheese (soft)
  • 1 Bell pepper
  • 1 Salami (in cubes)
  • 1 Tomato

Method

  • Mix the goat cheese, salami and tomato (cubes, fresh, not canned) in a bowl, add salt/pepper to taste
  • Chop the top off your bell pepper and remove core/seeds.
  • Stuff the goat and salami mix into the pepper.
  • Stick in the oven or microwave for a few minutes; the major advantage is that every ingredient is already totally OK to eat, so they're super quick!
  • (At my first try I stuck them in for ten minutes at approx 300F...that's way too much)!
  • Try adding fresh parsley, mint or basil to this recipe, or mix your stuffing up with some lime juice and top it off with fresh goat cheese just before serving.
