Ingredients
- 1/2 c. coarsely chopped dried apricots
- 1/2 c. boiling water
- 1 c. cubed mango or nectarine
- 1/3 c. sugar
- 1/4 c. raisins
- 1 Tbsp. white vinegar
- 1 Tbsp. fresh lemon juice
- 2 Tbsp. coarsely chopped walnuts
- 2 tsp. chopped ginger root
- 1/4 tsp. salt
Method
- In medium saucepan, combine apricots and water; set aside 10 minutes.
- Stir in remaining ingredients.
- Bring to boil over high heat; reduce heat and simmer, stir frequently, 10 minutes or until thickened.
- Serve warm or chilled.
