Ingredients

  • 1 tablespoon oil
  • 9 ounces mushrooms stems removed
  • 3 sprigs fresh parsley leaves chopped
  • 1/2 cup sour cream
  • 1 tablespoon milk
  • 1 tomato seeded, diced
  • 1 pinch cayenne pepper
  • mixed greens to garnish

Method

  • Heat oil in a frying pan. Saute mushrooms for 2 mins. Season then set aside.
  • Whisk together sour cream and milk until smooth. Add parsley, cayenne pepper and 2/3 of tomatoes. Fill mushrooms with mixture. Serve garnished with mixed greens and remaining tomatoes.
