Ingredients
- 1 tablespoon oil
- 9 ounces mushrooms stems removed
- 3 sprigs fresh parsley leaves chopped
- 1/2 cup sour cream
- 1 tablespoon milk
- 1 tomato seeded, diced
- 1 pinch cayenne pepper
- mixed greens to garnish
Method
- Heat oil in a frying pan. Saute mushrooms for 2 mins. Season then set aside.
- Whisk together sour cream and milk until smooth. Add parsley, cayenne pepper and 2/3 of tomatoes. Fill mushrooms with mixture. Serve garnished with mixed greens and remaining tomatoes.
