- 4 medium baking potatoes
- Vegetable cooking spray
- 2 tablespoons skim milk
- 4 ounces nonfat cream cheese
- 2 tablespoons chopped fresh chives
- 1 tablespoon minced onion
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon paprika
Method
- Scrub potatoes; coat with cooking spray. Bake at 400° for 55 minutes or until soft. Cool slightly. Cut potatoes in half lengthwise, and carefully scoop out potato pulp, leaving 1/4-inch-thick shells. Set shells aside. Place pulp in a small bowl; mash until smooth. Add milk and next 5 ingredients; stir well. Return mashed potato mixture to shells. Sprinkle with paprika; serve immediately.
