Ingredients
- 3 medium green peppers, cut in half
- 1/4 c. chopped onion
- 3/4 c. ground beef
- 1 c. cooked rice
- 1 (8 oz.) can tomato sauce
- 1/4 c. water
- 1 egg
- 1 tsp. salt
Method
- Remove seed section from cut green peppers.
- Place pepper halves on a paper towel and cook 6 minutes with microwave energy. Cook onions and beef in an 8-inch round glass cake dish about 4 minutes or until all pink has left the meat.
- Stir several times during cooking.
- Cook rice according to the directions.
- Mix the tomato sauce with water.
- Combine onion, beef mixture with cooked rice, half of tomato mixture, egg, salt and pepper.
- Stuff pepper halves and place in a 2-quart glass utility dish.
- Pour remaining tomato sauce over top and place wax paper over the dish.
- Cook with microwave 10 minutes.
- Recipe yields 6.
