Ingredients

  • 3 medium green peppers, cut in half
  • 1/4 c. chopped onion
  • 3/4 c. ground beef
  • 1 c. cooked rice
  • 1 (8 oz.) can tomato sauce
  • 1/4 c. water
  • 1 egg
  • 1 tsp. salt

Method

  • Remove seed section from cut green peppers.
  • Place pepper halves on a paper towel and cook 6 minutes with microwave energy. Cook onions and beef in an 8-inch round glass cake dish about 4 minutes or until all pink has left the meat.
  • Stir several times during cooking.
  • Cook rice according to the directions.
  • Mix the tomato sauce with water.
  • Combine onion, beef mixture with cooked rice, half of tomato mixture, egg, salt and pepper.
  • Stuff pepper halves and place in a 2-quart glass utility dish.
  • Pour remaining tomato sauce over top and place wax paper over the dish.
  • Cook with microwave 10 minutes.
  • Recipe yields 6.
