Ingredients

  • 6 peppers
  • 1 1/2 lb. ground beef
  • 4 oz. rice
  • 1 (28 oz.) can crushed tomatoes
  • 1 (28 oz.) can tomato puree
  • 1 medium size Spanish onion
  • salt and pepper to taste

Method

  • Cut the tops off peppers.
  • Dice the onion.
  • Mix ground beef, onion, rice, crushed tomatoes, salt and pepper in bowl until thoroughly combined.
  • Stuff into peppers.
  • Place peppers in a large pot; fill pot with tomato puree and water, just enough to cover peppers.
  • Stir occasionally.
  • Cook for 1 hour or until you can pierce a pepper with a fork.
  • The peppers will be tender when done.
