Ingredients
- 1 flank steak
- 3 Tbsp. butter
- 2 Tbsp. onion, minced
- 4 fresh mushrooms
- 3/4 c. bread crumbs
- 1 egg, slightly beaten
- 1/4 lb. sausage meat
- 1/8 tsp. thyme
- 1 c. beef stock
- 1 Tbsp. flour
Method
- Pound flank steak with mallet until 3/4-inch thick.
- Spread dressing mixture over all.
- Roll up as jelly roll.
- Tie securely in several places.
- Brown in butter in Dutch oven.
- Add beef stock.
- Cover.
- Bake in 325° oven for 1 1/2 hours.
- Thicken gravy. Serve with mashed potatoes.
