Ingredients

  • 4 pieces Chicken Breasts
  • 1 package Stovetop Stuffing
  • 1 can Mushroom Soup

Method

  • While preparing the chicken, preheat your oven to 350 degrees.
  • Have ready four or five toothpicks to seal each chicken breast.
  • Prepare Stovetop stuffing according to package instructions and set aside to moisten (or use homemade if you prefer).
  • While stuffing is moistening, pound each chicken breast flat with a meat tenderizer.
  • Place a few tablespoons of stuffing on top of each flattened breast.
  • Close the chicken around stuffing and seal shut with toothpicks.
  • Spray a sufficiently sized baking pan with cooking spray.
  • Place rolled up breasts in pan and pour undiluted mushroom soup over breasts, making sure to cover all the meat.
  • Cover with foil and bake in 350 degree oven for 20 minutes.
  • Remove foil and spoon soup over the chicken again (it will be much runnier now).
  • Replace foil and bake for another 10-20 minutes or until chicken is fully cooked.
  • Goes well with mashed potatoes and steamed broccoli.
