Ingredients

  • 8 chayote pears
  • 2 large onions, chopped fine
  • 2 large cloves garlic, chopped
  • 1 c. chopped celery
  • 2 lb. cooked shrimp
  • 1 lb. cooked ham, diced
  • 1/2 c. grated Cheddar cheese
  • 1/2 c. Italian bread crumbs
  • salt and pepper to taste
  • approximately 5 Tbsp. butter

Method

  • Halve the chayote pears horizontally.
  • Remove seed and place in a large Ziploc bag.
  • Cook on high 20 minutes.
  • Saute ham, onions and garlic with a tablespoon butter until vegetables are transparent.
  • Add celery and cook until tender.
  • Scoop out cooled chayote pear meat from outside shells.
  • Mash chayote pear meat and mix with shrimp and cheese.
  • Add to mixture in skillet.
  • Add bread crumbs.
  • Place in greased 8 x 12-inch casserole dish.
  • Cover with additional seasoned bread crumbs and cheese.
  • Bake at 350° for 30 minutes.
  • Serves 6 to 8. Can be used as a main dish or side dish.
