Ingredients

  • 1 1/2 c. flour
  • 1/4 c. sugar
  • 1/3 c. brown sugar, packed
  • 2 Tbsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 egg, slightly beaten
  • 8 Tbsp. unsalted butter, melted
  • 1/2 c. milk
  • 1 1/4 c. strawberries, chopped
  • 1 tsp. lemon zest, grated

Method

  • Preheat oven to 350°.
  • Line muffin cups with paper liners. Sift together flour, sugar, brown sugar, baking powder, salt and cinnamon into medium bowl.
  • Make a well in the center.
  • Put the egg, melted butter and milk in the well.
  • Stir until combined. Quickly stir in strawberries and lemon zest.
  • Fill each cup 3/4 full with batter.
