Ingredients
- 4 eggs
- 1 c. sugar
- 1/2 tsp. baking powder
- 14 Ritz crackers, rolled very fine
- 3/4 c. chopped nuts
- 1 qt. fresh or frozen strawberries
- 1 1/2 c. Cool Whip
Method
- For Pie, separate eggs. Mix 4 stiffly beaten egg whites with one cup sugar, added slowly; beat until stiff. Combine baking powder, crackers, and nuts to egg mixture. Place in a well-buttered 9-inch pie tin and bake for 40 minutes in a 325° oven. Cool.
- For the filling, mix strawberries with Cool Whip and place on top of pie shell.
