Ingredients

  • 8 cups strawberries
  • 4 tablespoons lemon juice
  • 7 cups sugar
  • 1 (1 3/4 ounce) box fruit pectin

Method

  • Crush strawberries to yield 5 liquid cups.
  • Mix crushed strawberries and lemon juice in 6-8 qt saucepan.
  • Whisk in fruit pectin.
  • Bring to a rolling boil over high heat, stirring constantly.
  • Add sugar all at once.
  • Return to rolling boil, stirring constantly, and boil for 1 minute.
  • Remove from heat.
  • Ladle into prepared 1/2 pint jars, leaving 1/4" headspace.
  • Lid jars and place into boiling canner.
  • Boil jars for 10 minutes.
  • Remove jars from boiler and let them cool for 24 hours for a good seal.
