Ingredients
- 8 cups strawberries
- 4 tablespoons lemon juice
- 7 cups sugar
- 1 (1 3/4 ounce) box fruit pectin
Method
- Crush strawberries to yield 5 liquid cups.
- Mix crushed strawberries and lemon juice in 6-8 qt saucepan.
- Whisk in fruit pectin.
- Bring to a rolling boil over high heat, stirring constantly.
- Add sugar all at once.
- Return to rolling boil, stirring constantly, and boil for 1 minute.
- Remove from heat.
- Ladle into prepared 1/2 pint jars, leaving 1/4" headspace.
- Lid jars and place into boiling canner.
- Boil jars for 10 minutes.
- Remove jars from boiler and let them cool for 24 hours for a good seal.
