Ingredients

  • 1 pkg frozen strawberries (10-12 oz)
  • 1/2 cup confectioners' sugar
  • 1 cup chilled heavy cream
  • 2 oz dark chocolate, chopped
  • 1 tbsp pistachios, finely chopped

Method

  • In a large metal bowl, mix together the strawberries and sugar and let thaw for 15-20 mins.
  • Place the strawberry mixture in a blender, add the cream and puree until smooth. Return the mixture to the bowl, then cover and freeze for 15-20 mins.
  • Melt the chocolate in a metal bowl set over a pan of barely simmering water. Stir until smooth. Remove from the heat and cool for 5 mins. Using an ice cream scoop, divide the ice cream among four dessert dishes. Drizzle over the melted chocolate, then sprinkle with the pistachios. Freeze for 5 mins, then serve.
