Ingredients

  • 1/2 lb. vanilla wafers, crushed
  • 1/2 c. softened butter
  • 1 1/2 c. powdered sugar
  • 1/2 pt. Cool Whip
  • 1 qt. strawberries, crushed (reserve juice)
  • 1 tsp. vanilla
  • 2 eggs, separated

Method

  • Line a 9 x 13-inch pan with all but 1/4 wafer crumbs.
  • Cream butter and sugar together; add beaten egg yolks.
  • Fold in beaten egg whites and vanilla.
  • Add strawberry juice; cook to custard stage.
  • Pour mixture into pan on top of crumbs.
  • Place strawberries on top of mixture.
  • Spread Cool Whip over strawberries and sprinkle with remaining crumbs.
  • Refrigerate overnight.
