Ingredients
- 1/2 lb. vanilla wafers, crushed
- 1/2 c. softened butter
- 1 1/2 c. powdered sugar
- 1/2 pt. Cool Whip
- 1 qt. strawberries, crushed (reserve juice)
- 1 tsp. vanilla
- 2 eggs, separated
Method
- Line a 9 x 13-inch pan with all but 1/4 wafer crumbs.
- Cream butter and sugar together; add beaten egg yolks.
- Fold in beaten egg whites and vanilla.
- Add strawberry juice; cook to custard stage.
- Pour mixture into pan on top of crumbs.
- Place strawberries on top of mixture.
- Spread Cool Whip over strawberries and sprinkle with remaining crumbs.
- Refrigerate overnight.
