Ingredients

  • 1 (6 oz.) can crabmeat, drained
  • 1 c. shredded Swiss or Mozzarella cheese
  • 1/3 c. minced green onions
  • 1 Tbsp. minced fresh parsley
  • 4 eggs, beaten
  • 2 c. half and half
  • 1/2 tsp. salt
  • 1/8 tsp. red pepper
  • parsley sprigs
  • 1 (9-inch) deep dish pastry shell

Method

  • Bake at 425° the deep dish pie crust for 5 minutes.
  • Prick bottom and sides of pastry.
  • Sprinkle crabmeat, cheese, green onions and 1 tablespoon parsley evenly into pastry shell.
  • Combine next 4 ingredients; stir well.
  • Pour over crabmeat mixture.
  • Bake in 325° oven for 35 to 40 minutes.
  • Let stand 10 minutes before serving.
