Ingredients
- 1 envelope unflavored gelatin
- 1/4 c. water
- 3 c. sliced fresh strawberries
- 3 Tbsp. sugar
- 2 Tbsp. water
- 1 1/2 Tbsp. lemon juice
Method
- Soften gelatin in 1/4 cup water; set aside.
- Combine remaining ingredients in a medium saucepan.
- Bring to a boil; reduce heat and simmer uncovered for 8 minutes, stirring frequently.
- Remove from heat and add gelatin mixture, stirring until gelatin is dissolved.
- Cool to room temperature.
- Pour strawberry mixture into sterilized glass jars; cover tightly.
- Refrigerate at least 4 to 6 hours or until mixture is thoroughly chilled.
- Store in refrigerator for up to 1 month.
- Yield:
- 3 half pints (about 7 calories per tablespoon).
