Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 c. water
  • 3 c. sliced fresh strawberries
  • 3 Tbsp. sugar
  • 2 Tbsp. water
  • 1 1/2 Tbsp. lemon juice

Method

  • Soften gelatin in 1/4 cup water; set aside.
  • Combine remaining ingredients in a medium saucepan.
  • Bring to a boil; reduce heat and simmer uncovered for 8 minutes, stirring frequently.
  • Remove from heat and add gelatin mixture, stirring until gelatin is dissolved.
  • Cool to room temperature.
  • Pour strawberry mixture into sterilized glass jars; cover tightly.
  • Refrigerate at least 4 to 6 hours or until mixture is thoroughly chilled.
  • Store in refrigerator for up to 1 month.
  • Yield:
  • 3 half pints (about 7 calories per tablespoon).
