Ingredients

  • 1 cup Butter Softened
  • 1 1/2 cups Sugar
  • 3 ounces Strawberry-Flavored Gelatin
  • 4 pieces Eggs, room temperature
  • 2 1/2 cups All-Purpose Flour
  • 2 1/2 teaspoons Baking Powder
  • 1 cup Milk, Whole, room temperature
  • 1/2 cup Strawberries, frozen, pureed
  • 1 tablespoon Vanilla Extract

Method

  • Remove eggs, milk and butter from refrigerator a few hours before making the batter.
  • Preheat oven to 350 degrees
  • Grease and flour two 9-inch round pans
  • In a large bowl, combine butter, sugar and strawberry gelatin. Mix on medium speed until light and fluffy.
  • Separate the eggs; add the yolks to the batter and mix well.
  • Whip the eggs vigorously until soft peaks form before mixing into the batter.
  • Sift flour then measure and put into a separate bowl.
  • Combine the baking powder with the sifted flour.
  • Alternate adding flour mixture and milk to batter, mixing with each addition.
  • Use a blender to make a strawberry puree from frozen strawberries. Add a bit of water until smooth.
  • Add 1/2 cup of puree to the batter along with the vanilla and mix well.
  • Pour batter into prepared pans.
  • Bake for 25 to 30 minutes until a toothpick comes out clean.
  • Cool on wire racks for at least 10 minutes prior to removing from pans to allow to cool completely prior to frosting.
