Ingredients
- 1 cup Butter Softened
- 1 1/2 cups Sugar
- 3 ounces Strawberry-Flavored Gelatin
- 4 pieces Eggs, room temperature
- 2 1/2 cups All-Purpose Flour
- 2 1/2 teaspoons Baking Powder
- 1 cup Milk, Whole, room temperature
- 1/2 cup Strawberries, frozen, pureed
- 1 tablespoon Vanilla Extract
Method
- Remove eggs, milk and butter from refrigerator a few hours before making the batter.
- Preheat oven to 350 degrees
- Grease and flour two 9-inch round pans
- In a large bowl, combine butter, sugar and strawberry gelatin. Mix on medium speed until light and fluffy.
- Separate the eggs; add the yolks to the batter and mix well.
- Whip the eggs vigorously until soft peaks form before mixing into the batter.
- Sift flour then measure and put into a separate bowl.
- Combine the baking powder with the sifted flour.
- Alternate adding flour mixture and milk to batter, mixing with each addition.
- Use a blender to make a strawberry puree from frozen strawberries. Add a bit of water until smooth.
- Add 1/2 cup of puree to the batter along with the vanilla and mix well.
- Pour batter into prepared pans.
- Bake for 25 to 30 minutes until a toothpick comes out clean.
- Cool on wire racks for at least 10 minutes prior to removing from pans to allow to cool completely prior to frosting.
