Ingredients

  • 1 1/4 c. vegetable oil
  • 4 eggs
  • 20 oz. fresh strawberries or unsweetened frozen (undrained), thawed
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. chopped pecans

Method

  • Beat oil and eggs until fluffy.
  • Add berries and mix well. Combine flour, soda, salt and cinnamon and sugar and add to egg mixture, stirring until blended.
  • Stir in chopped pecans.
  • Pour batter into 2 greased and lightly floured 9 x 5-inch loaf pans. Bake at 325°
  • for 1 hour and 15 minutes, or until wooden pick inserted in center comes out clean.
