Ingredients
- 1 1/4 c. vegetable oil
- 4 eggs
- 20 oz. fresh strawberries or unsweetened frozen (undrained), thawed
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. chopped pecans
Method
- Beat oil and eggs until fluffy.
- Add berries and mix well. Combine flour, soda, salt and cinnamon and sugar and add to egg mixture, stirring until blended.
- Stir in chopped pecans.
- Pour batter into 2 greased and lightly floured 9 x 5-inch loaf pans. Bake at 325°
- for 1 hour and 15 minutes, or until wooden pick inserted in center comes out clean.
