Ingredients

  • 1 lb. roasting chicken
  • 1 pkg (120 g) Stove Top Stuffing Mix for Chicken
  • 1 orange, chopped
  • 1/2 cup each: orange juice and chopped cranberries
  • 1 Tbsp. grated orange rind

Method

  • RINSE chicken; trim off excess skin and fat.
  • Using sharp knife or poultry shears cut chicken through backbone and remove backbone (do not remove skin).
  • Turn chicken right-side up; flatten with palm of hand.
  • PREPARE stuffing according to directions, reducing water to 1\2 cup (125 mL).
  • Add chopped orange, juice, cranberries and rind; do not cook.
  • EVENLY spread stuffing under skin.
  • Thread 2 large metal skewers diagonally through chiken to keep flat while roasting.
  • ROAST at 400F (200C) on rack; covering loosely with foil, for 1 1\2 hours or until done.
