Ingredients

  • 1 lb. golden raisins
  • 1/4 lb. blanched, chopped almonds
  • 1/4 lb. fruit cake mix (citron)
  • 1/4 tsp. mace
  • 1/4 tsp. nutmeg
  • 1 c. sugar
  • 3/4 tsp. salt
  • grated lemon rind (1/2 to 1 Tbsp.)
  • 2 Tbsp. lemon juice
  • 1/2 lb. butter
  • 1 envelope yeast
  • 1 1/2 c. milk
  • 6 c. flour
  • 3 whole eggs

Method

  • Soften yeast in 1/4 cup lukewarm water.
  • Melt butter (margarine or half and half) in milk.
  • In large mixer bowl, put sifted flour with salt.
  • Make a well in center and add the milk/butter mixture (slightly cooled) and eggs.
  • Stir with a wooden spoon to blend along with the yeast.
  • Add the fruit and sugar mixture.
  • Knead or use dough hooks and work until smooth, elastic and cleans the bowl.
  • Cover with towel and set in warm (not hot) place for 12 hours.
