Ingredients

  • 3 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 tablespoons chilli sauce
  • 8 chicken drumsticks
  • 2 1/4 pounds potatoes cut into wedges
  • 2 red peppers deseeded and cut into wedges
  • 2 garlic cloves chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 3 tablespoons olive oil
  • fresh thyme to garnish, optional

Method

  • Preheat the oven to 400°F. For the glaze, place the ketchup in a small saucepan with the soy sauce, honey and chili sauce and heat gently.
  • Place the chicken drumsticks in a roasting pan and brush with the glaze. Roast for 35-40 mins, until cooked through.
  • Place the potato wedges and peppers on a baking sheet and add the garlic, thyme and rosemary. Season with salt and freshly ground black pepper. Drizzle with the oil and toss well to mix. Roast alongside the chicken for 30-35 mins, turning occasionally, until the potatoes are cooked through and golden. Garnish with the fresh thyme, if using.
