Ingredients
- 3/4 lb. asparagus or 20 (3/4-inch) stalks
- 2 Tbsp. water
- 2 Tbsp. chopped roasted sweet red pepper
- 1 Tbsp. sour cream
- 1/4 tsp. cider vinegar
- 1/8 tsp. salt
Method
- Remove and discard woody ends of asparagus stalks.
- With vegetable peeler, peel lower part of each stalk.
- Arrange in single layer in shallow 10-inch microwave-safe dish.
- Add water. Cover with plastic wrap and microwave 3 to 4 minutes.
