- 1 lb baby potatoes, halved
- 4 oz green beans, trimmed
- 2 tbsp creamed horseradish
- 1 tbsp olive oil
- 1 lb beef sirloin
- 1/4 cup sour cream
- 2 tbsp dill, chopped
- 4 oz mixed salad greens
- 16 oz can baby beets, drained, halved
Method
- Place potatoes in a saucepan and cover with cold water. Bring to boil on high and cook 10-12 mins until tender. Add green beans for final 1 min of cooking time.
- Meanwhile, in a small bowl combine half of horseradish and oil. Season to taste. Brush on beef. Heat a medium frying pan on high. Cook beef 3 mins each side, or until cooked to taste. Transfer to a plate and let rest, covered, 5 mins.
- For the dressing, whisk sour cream, dill and remaining horseradish together. Season to taste.
- Arrange potatoes, beans, lettuce and beets on a large platter. Thinly slice beef and arrange on top. Drizzle with dressing to serve.
