Ingredients

  • 4 large eggs
  • 6 slices American mild cheese, grated or cut up
  • 1/4 red pepper, diced
  • 1/4 green pepper, diced
  • 1/2 onion, diced
  • 4 or 5 crew neck squash

Method

  • Preheat oven to 325°.
  • Slice squash slightly thin.
  • Blanch squash and drain; set aside.
  • Beat eggs as if for an omelet.
  • Add cheese, pepper and onion; blend.
  • Spray glass baking dish with Pam cooking spray.
  • Place a row of squash in dish.
  • Pour a covering of egg mixture.
  • Add remaining squash and cover with remaining egg mixture.
  • Sprinkle with paprika and bake until done, approximately 20 minutes.
