Ingredients

  • 3 c. cooked mashed squash
  • 3 Tbsp. honey
  • 3 Tbsp. whole wheat flour
  • 3/8 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/4 tsp. nutmeg
  • 3 eggs, separated

Method

  • Cut squash and scoop out seeds.
  • Steam or bake in a 350° oven until tender.
  • Remove skin and mash.
  • Mix honey, flour, salt, spices and egg yolks.
  • Whip until blended.
  • Beat egg whites until stiff, but not dry.
  • Fold into squash mix.
  • Pour into lightly oiled 1 1/2 quart dish.
  • Bake in a 350° oven until crusty, about 45 minutes.
