Ingredients
- 3 c. cooked mashed squash
- 3 Tbsp. honey
- 3 Tbsp. whole wheat flour
- 3/8 tsp. salt
- 1/4 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. nutmeg
- 3 eggs, separated
Method
- Cut squash and scoop out seeds.
- Steam or bake in a 350° oven until tender.
- Remove skin and mash.
- Mix honey, flour, salt, spices and egg yolks.
- Whip until blended.
- Beat egg whites until stiff, but not dry.
- Fold into squash mix.
- Pour into lightly oiled 1 1/2 quart dish.
- Bake in a 350° oven until crusty, about 45 minutes.
