Ingredients
- 1 gallon thinly sliced squash
- 8 medium thinly sliced onions
- 1/2 cup salt
- 5 cups vinegar
- 5 cups sugar
- 1 1/2 tsp. celery seed
- 2 Tbsp. mustard seed
- 1 tsp. pickling spice
- 1 1/2 tsp. turmeric
Method
- Soak squash and onions in 1 gallon ice water for 3 hours and drain.
- Bring the vinegar, sugar and spices to a boil.
- Drop in the squash and onions and boil for 3 minutes.
- Pack in sterilized jars and seal.
