- 5 zucchini
- 5 yellow squash
- 1 medium onion
- 1 medium green pepper
- leaves of 4 celery stalks
- 6 Tbsp. margarine
- 1 egg, beaten
- 1 1/4 c. Cheddar cheese, grated
- 1/3 c. cracker crumbs
- seasoned salt
Method
- Slice and boil squash until soft.
- Brown onion, pepper and celery in 2 tablespoons of margarine.
- Drain squash and mash with browned mixture.
- Add 4 tablespoons margarine, 1/2 cup cheese, cracker crumbs and seasoned salt to taste.
- Add beaten egg and cover with remaining cheese.
- Bake at 375° for 45 minutes in a 12 x 8 x 1-inch pan sprayed with nonstick spray.
