Ingredients

  • 6 to 8 small yellow squash
  • 1 tsp. Worcestershire sauce or soy sauce
  • 1 small onion, chopped
  • 1 Tbsp. mayonnaise
  • 1 egg
  • 1/2 to 3/4 c. shredded Cheddar cheese
  • butter
  • bread crumbs

Method

  • Preheat oven to 350° to 375°.
  • Wash and dice squash.
  • Cook in 1-inch of water with Worcestershire or soy sauce.
  • Cook at medium-high heat until almost done (about 10 to 15 minutes). Drain well.
  • Mix in onion, mayonnaise, egg and cheese.
  • Stir to mix together and pour into square 8 x 8 or 9 x 9-inch baking dish. Lay pads of butter onto top, then top with breadcrumbs.
  • Bake 40 minutes.
