Ingredients
- 6 to 8 small yellow squash
- 1 tsp. Worcestershire sauce or soy sauce
- 1 small onion, chopped
- 1 Tbsp. mayonnaise
- 1 egg
- 1/2 to 3/4 c. shredded Cheddar cheese
- butter
- bread crumbs
Method
- Preheat oven to 350° to 375°.
- Wash and dice squash.
- Cook in 1-inch of water with Worcestershire or soy sauce.
- Cook at medium-high heat until almost done (about 10 to 15 minutes). Drain well.
- Mix in onion, mayonnaise, egg and cheese.
- Stir to mix together and pour into square 8 x 8 or 9 x 9-inch baking dish. Lay pads of butter onto top, then top with breadcrumbs.
- Bake 40 minutes.
