Ingredients
- 2 lb. fresh or 2 (10 oz.) pkg. frozen squash, diced
- 3 slices bacon
- 1 c. shredded cheese
- 1 large onion
- salt and pepper
- dash of nutmeg
- 3 eggs, beaten
Method
- Boil squash until tender; drain.
- Fry bacon.
- When bacon is done, remove it from the pan and fry the onion in the bacon grease until the onion looks clear.
- Mix onion, bacon grease, squash and eggs.
- Then add cheese, salt, pepper and nutmeg.
