Ingredients

  • 6 to 7 large squash
  • 1 large onion, chopped
  • 2 c. cornbread crumbs
  • 1 egg
  • 1 stick melted butter
  • 1 tsp. sugar
  • salt and pepper to taste

Method

  • Wash squash and slice.
  • Boil squash in pan along with 1/2 cup chopped onion, sugar, salt and pepper.
  • Boil for 15 to 20 minutes; drain.
  • Pour squash into casserole dish.
  • Mash lightly.
  • Add 1/2 of cornbread, egg, 1/2 melted butter and the rest of the onions.
  • Mix. Pour the other half of the cornbread crumbs on top of casserole. Pour remaining butter on top of cornbread.
  • Cook for 45 minutes at 375°.
