Ingredients
- 6 to 7 large squash
- 1 large onion, chopped
- 2 c. cornbread crumbs
- 1 egg
- 1 stick melted butter
- 1 tsp. sugar
- salt and pepper to taste
Method
- Wash squash and slice.
- Boil squash in pan along with 1/2 cup chopped onion, sugar, salt and pepper.
- Boil for 15 to 20 minutes; drain.
- Pour squash into casserole dish.
- Mash lightly.
- Add 1/2 of cornbread, egg, 1/2 melted butter and the rest of the onions.
- Mix. Pour the other half of the cornbread crumbs on top of casserole. Pour remaining butter on top of cornbread.
- Cook for 45 minutes at 375°.
