Ingredients
- 1 broiler fryer, cut up
- 2 Tbsp. oleo
- 3 yellow squash, sliced
- 3 zucchini squash, sliced
- 1 large onion, cut up
- 1 tomato, chopped
- 1 tsp. salt
- 1/2 tsp. basil
- 1/4 tsp. marjoram
- 1/4 tsp. dried chives
- 1/4 tsp. black pepper
- 1/4 tsp. paprika
Method
- In large frypan (pot), place oleo and melt over medium-high heat.
- Add chicken and cook, turning about 10 minutes or until brown on all sides.
- Remove chicken from pan and keep warm.
- Place yellow and zucchini squash and onion in pot and stir about 5 minutes.
- Return chicken to pot.
- Add tomatoes, then sprinkle with spices.
- Reduce heat to medium-low.
- Cover and cook for about 20 minutes or until fork can be inserted in chicken with ease.
- Serve hot with rice.
