Ingredients

  • 1 broiler fryer, cut up
  • 2 Tbsp. oleo
  • 3 yellow squash, sliced
  • 3 zucchini squash, sliced
  • 1 large onion, cut up
  • 1 tomato, chopped
  • 1 tsp. salt
  • 1/2 tsp. basil
  • 1/4 tsp. marjoram
  • 1/4 tsp. dried chives
  • 1/4 tsp. black pepper
  • 1/4 tsp. paprika

Method

  • In large frypan (pot), place oleo and melt over medium-high heat.
  • Add chicken and cook, turning about 10 minutes or until brown on all sides.
  • Remove chicken from pan and keep warm.
  • Place yellow and zucchini squash and onion in pot and stir about 5 minutes.
  • Return chicken to pot.
  • Add tomatoes, then sprinkle with spices.
  • Reduce heat to medium-low.
  • Cover and cook for about 20 minutes or until fork can be inserted in chicken with ease.
  • Serve hot with rice.
