Ingredients

  • 3 c. rhubarb, cut
  • 1/4 c. water
  • 1 c. sugar
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/3 c. shortening
  • 2/3 c. sugar
  • 1 tsp. grated orange rind
  • 1 egg
  • 1/2 tsp. vanilla
  • 2/3 c. milk

Method

  • Put
  • rhubarb
  • and
  • water
  • in
  • saucepan and
  • cook until tender, about
  • 10
  • or 15 minutes.
  • Add 1 cup sugar.
  • Simmer 10 minutes
  • longer.
  • Sift together flour, baking powder and salt. Cream
  • together
  • shortening and sugar.
  • Add grated orange rind and egg
  • and beat until light and fluffy.
  • Add vanilla to milk and add
  • to
  • creamed
  • mixture alternately with flour mixture. Stir until smooth.
  • Pour batter into greased 8 x 8-inch square pan. Pour
  • bubbling
  • hot rhubarb sauce over the batter. Bake at 350° for
  • about 45
  • minutes.
  • Serve with whipped topping. Serves 6.
