Ingredients
- 2 c. split peas
- 1 ham bone or 1 1/2 lb. salt pork
- 3 celery tops
- 1/2 c. milk (if needed)
- 3 qt. or more cold water
- 1 large onion, diced
- 1 sprig parsley
Method
- Soak peas overnight in water.
- In a large kettle, boil, for 30 minutes, all of the ingredients.
- Turn burner to simmer and cook until peas are soft (4 to 5 hours).
- Dilute with water or milk if mixture becomes thick.
- Season to taste.
- Serves 8 to 10.
