Ingredients

  • 200 g (7 oz) spiral pasta
  • 125 g (4 1/2 oz) broccoli florets
  • 15 g (1/2 oz) butter
  • 125 g (4 1/2 oz) leg ham, cut into strips
  • 1 garlicclove, crushed
  • 3 spring onions (scallions), chopped
  • 100 g (3 1/2 oz) mushrooms, sliced
  • 125 ml (4 fl oz/1/2 cup) thick (double/heavy) cream
  • 1 small handful flat-leaf (Italian) parsley, roughly chopped

Method

1. Cook the pasta in a large saucepan of boiling water for 12 minutes or until just tender. Drain, then return to the pan.

2. Cook the broccoli in a small saucepan of rapidly boiling water for 2 minutes or until tender. Drain.

3. Heat butter in a large frying pan. Add the ham and stir over medium heat for 2 minutes, or until browned.

4. Add garlic, spring onion and mushrooms and stir for 2 minutes. Add drained pasta, broccoli, cream and parsley. Stir for 1 minute, or until heated through.
