Ingredients
- 1 1/2 lb. fresh spinach
- 2 boiled eggs
- 6 slices lean bacon
- 1/3 c. corn oil
- 1 tsp. minced garlic
- 1/4 c. red wine vinegar
- 1/4 c. chopped, fresh parsley
Method
- Pick over the spinach and remove any tough stems and blemished leaves.
- Tear into small pieces.
- Fry the bacon until crisp and crumble.
- Slice the boiled eggs.
- Place the spinach in a serving bowl and top with the sliced eggs.
