Ingredients

  • 1 lb. fresh spinach
  • 5 leaves of head lettuce
  • 3 green onions, chopped
  • 2 stalks celery, sliced
  • 1/4 lb. fresh mushrooms, sliced
  • 1 hard-boiled egg, sliced
  • 1 large tomato, cut into wedges
  • 1 c. oil and vinegar dressing
  • 1 c. herbal seasoned croutons

Method

  • Tear spinach and lettuce into bite sized pieces in a large bowl; add green onions, celery, mushrooms and tomato.
  • Toss mixture with dressing; garnish with egg slices and croutons. Makes 8 to 10 servings.
