- 1 lb. fresh spinach
- 5 leaves of head lettuce
- 3 green onions, chopped
- 2 stalks celery, sliced
- 1/4 lb. fresh mushrooms, sliced
- 1 hard-boiled egg, sliced
- 1 large tomato, cut into wedges
- 1 c. oil and vinegar dressing
- 1 c. herbal seasoned croutons
Method
- Tear spinach and lettuce into bite sized pieces in a large bowl; add green onions, celery, mushrooms and tomato.
- Toss mixture with dressing; garnish with egg slices and croutons. Makes 8 to 10 servings.
